The past two days we have been chomping down on the most divine leafy green that is completely new to me. We picked it up from the organic farmer at the market yesterday and I simply can’t get enough of it. With a perfect crispy bite and a hint of citrus flavor, I had to dig into what this magically green is all about.
Purslane—rich in fiber, vitamins and minerals, this leafy green contains more omega 3 fatty acids than any other leafy green. Not to mention its high source of vitamin A (also one of the highest among leafy greens) and its rich source of vitamin C with some B-complex.
Once again, this green is considered a weed and grows rapidly in European counties as well as Asia. Growing along the roadsides throughout our towns are wild mint, blackberries, dandelion and more. We’re are thinking to forage quite a bit and craft our own tea as it would prove to be quite rewarding in this damp overcast weather.
